InThe Bear’s season 3 premiere, Carmy gets to the restaurant early to prepare for the day as he reflects on all the past traumas that shaped who he is today. When the rest of the team arrive at the restaurant, Carmy introduces them to the new menu and tells them that he’ll be creating a new one every single day. Richie, as usual, objects to this change and, as usual, it escalates to a screaming match with Carm. But Carmy has a good reason for changing the menu every day.

Carmy doesn’t want himself or any of his team to get complacent at The Bear.Mikey got complacent when he was managing The Beef and he ran it into the ground– so badly that Carmy had to tear down The Beef and start fresh as The Bear. He doesn’t want that to happen to The Bear, so he’s keeping his chefs and waitstaff on their toes by bringing in a brand-new menu every single day. If they avoid settling into a routine, The Bear will keep evolving and (hopefully) become even better.
Carmy Hopes The Diversity & Ingenuity In The Bear’s Menu Will Help Get Them A Star
Carmy’s main goal in season 3 is to earn “a star”
When he introduces the first of many new menus, Carmy mentions that his ultimate goal is to get “a star.”This is a reference to the Michelin star rating systemthat determines a restaurant’s quality: one star indicates a very good restaurant; two stars indicates a restaurant that’s worth making a detour for; and three stars indicates a restaurant so good that it’s worth making a pilgrimage just to eat there. If The Bear can get just one star, then it’ll have its foot in the door and be on its way to earning its second and third stars.
With his new-menu-every-day plan inThe Bearseason 3, Carmy is hoping to earn that first star for his restaurant. His goal in season 1 was tokeep The Beef afloatand his goal in season 2 was to get The Bear open without too many disasters. In season 3, he’s setting his sights a little higher and going for a coveted Michelin star.
